Don't particularly "collect" them, but I have a 16-gauge Fox-Sterlingworth Skeet & Upland Game Gun and have a 16-gauge Winchester Model 21 Skeet Gun on the way to my friendly FFL.

I enjoy owning a (by and large) factory original Rem S48 Skeet model, 25.5" VR w/midbead, satin finish & fatter/wider fore stock. Only thing not OEM on it is the vented butt pad (added long ago) but do have the original butt plate and not sure if the choke had been altered, mics at 0.680". Truly a joy, fits and comes up effortlessly like piece in a puzzle.

And for the foreseeable future is not for sale.

As for many here, all of them can be Skeet guns at various times. A M97 with a Cyl choke is probably better suited than some, and a barrel with no choke makes the A5 good for it. My M21 is a Trap grade, but with barrels of only 26" and chokes of Modified in the right and Cyl in the left it seems to have been made for Skeet of the day.

I use a A5 with no choke for skeet

fer sure? Most 16 bores are .665 +/- .002

The M31 16 I sold last year had a bore of .676", maybe the 11-48 or Sportsman 48 was similarly constructed.

They work as well as anything else for me, I blame errant pointing more than choke for my undisturbed skeet targets. The barrel I picked up for mine was marked IC, overstruck as "Skeet" and has a straight bore to the end. Got all the open options covered with one item.

Les Hovencamp can set it straight. Les is the former head 'smith of Ithaca Gun Co. Gil

Yep, fer sure, although un-certified, I'm a dial caliper jockey of ~40yrs now... I've found the 16ga 48's bore run a bit on the overbored side, I have another 16ga 48 Full cut back to ~21" on my 1148 Brushhog and the bore mics at 0.677". Using a Sterrett ID/bore gauge reaching back in the muzzle of this S48 Skeet model ~3" it confirms at 0.678" and measuring the muzzle/choke with my Sterrett dial caliper (old school = has a real dial & no battery's and like it) actually mics at 0.681" so looks like it has been altered but not sure how to confirm if Rem's idea of a Skt choke in the 48 barrels had a blunderbuss profile. Devils in the details....

Remington's SKEET choke on their Sportsman autoloaders and Model 31 pumps is similar to Winchester's WS-1 with about .005" or .006" choke and then a flare to the muzzle. I don't know if this style SKEET choke carried on into the Sportsman - 48 and Model 870 Skeet Guns.
