Goose breast cubed to 1" pieces marinated in worchestershire sauce onion and garlic powder for about a hour. Stir fry medium rare in a cast iron skillet let stand 5 minutes. Serve with french fries. Never met anyone that didn't make a pig of themselves. |

I am not surprised and am very glad to see season hunters properly preparing and enjoying the harvest of their hunts!
I am an always trying new recipes with my upland game meat. I use a smoker a lot and am a big fan of salt/ sugar brines and enhance it with fruit juices at times.Love to used a little buttermilk on ducks, especially teal, in my brine.
Jeff's smoking meats in Oklahoma has some good recipes for smoking meat. I use a Treager pellet smoker, a Ninja Foodie and slow cooker a lot.
My wife makes a killer stir fry using pheasant breast or Huns in place of chicken or beef.

Tony/MaxSmoke, my hunt buddy lives in Casa Grande, and I'm over near Buckeye. Hook up with me for local skeet when you get out there, there are 2 good places 15 to 20 min or less. My favorite 2 dove places, diries both, sold their land this year and warehouses are already up But I do a lot of desert walking for dove. Lots of places near Buckeye for quail and dove both though. |

Rare to medium rare wood duck and gwt; snipe, wooccock and dove.
Nothing much better than woodcock roasted on high heat, smoothered in butter sauteed chanterelles. Any of the above will do. Pair of doodles below.

Most of my Woodies are shot on the river behind the house. When they have been eating hickory nuts they are the best of all ducks. Or all gamebirds actually. |

I primarily hunt pheasant and have developed many great recipes over the years. Also like Chukars as their breast is just about the whitest of white meat. However, I have to give the nod to Bobwhite Quail. The breast meat is so sweet and tender. Just made Quail Marsala for the wife and I. Tastes just as good as the Veal version.......that's saying something. |
