I chill in cold water in the fridge, and then freeze in water. I'll have to try that vaccum sealed bag trick,though.

I'll second the vacuum sealer. I just went on a salmon charter and sealed about 33 pounds of salmon fillets. These have lasted over six months with no ill effects of freezer burn in the past. They've never lasted longer than that without sucumbing to Weber burn! Laughing

The sealer works great on birds, my homemade venison sausages, my garden veggies, pretty much everything you can fit in the vacuum bags.

The wife bought me a vaccum sealers for Xmas last year. All I can say is anyone that hunts or fishes and puts a lot of game in the freezer needs to have one of them. Wink

Or anyone who buys 2 or 3 whole KC Strips or Ribeyes on the cheap, cuts them himself, vacuum packs 2 or 4 to a bag, and feels like a king serving great steaks to his guests for a third of what they would cost out of the butcher case.
