Matt: this isn't the most exotic dish but sure is good eatin'
Very Happy
Parmesan Crusted Chukar

Marinate 4-6 boneless breast halves in Wishbone Robusto Italian dressing
Combine 1/2 cup real mayonnaise
1/4 cup grated Parmesan (or Romano) cheese

Combine mayo and cheese mix and spread on chukar breasts then sprinkle with Italian seasoned dry bread crumbs.

Bake at 425 20-25 minutes.

Can be served over an Al Fredo pasta (You didn't get this from me and don't have your lipid profile checked for a few weeks thereafter Rolling Eyes ) but is great by itself with a green salad and Italian bread. Tell the 'non wild game' folks it's free range chicken-they'll love it!

Wonderful Rev! Concerning the lipid profile – I’d recommend a couple of glasses of Sangieovese to counteract the fats.

I'm in just about the same situation. Had Rusty out for his first preserve hunt this morning. Bagged 3 chukar. I don't have any pic's, but he did pretty well.
